You have to grind up uncooked, soaked chickpeas and they didn't grind up fine enough and made the final product too crunchy. I might try again, but for now, I'm quite happy with the falafel mix from Coop. I find it best if you let it soak the full hour. And when forming the balls, use a very light hand so it isn't dense. Good luck.

- TanyaTanya Dhttps://www.blogger.com/profile/13913356411257627601noreply@blogger.comtag:blogger.com,1999:blog-25454672.post-555406031690397612012-02-08T23:21:30.224+01:002012-02-08T23:21:30.224+01:00Hi Deepa,

I've only seen Lemon Aroma (available everywhere), but I'm pretty sure it's quite different from what Americans think of as lemon extract. Lemon Aroma is much less strong and typically you pour in the whole little bottle, not just a few drops.

At Real in Singen, DE, I saw Lemonschale (lemon peel) in several packaged forms, which would probably be a more concentrated flavor than lemon aroma.

You can buy real lemon extract for 8.90 at this online swiss shop: http://www.afoodave.ch/mccormick-pure-lemon-extract.html

Of course, you could make your own lemon extract with vodka. Check this blog: http://www.afoodave.ch/mccormick-pure-lemon-extract.html

Happy baking!

- TanyaTanya Dhttps://www.blogger.com/profile/13913356411257627601noreply@blogger.comtag:blogger.com,1999:blog-25454672.post-25450747471114063382012-02-01T01:22:33.620+01:002012-02-01T01:22:33.620+01:00Hi is lemon extract available in coop or migros? i...Hi is lemon extract available in coop or migros? if so which brand is better and under what name should i search for it?deepanoreply@blogger.comtag:blogger.com,1999:blog-25454672.post-65932165626966318282012-01-09T23:59:44.200+01:002012-01-09T23:59:44.200+01:00Thanks Cicci for your comment. Spelt is just another kind of wheat with high protein and low gluten, so it's NOT like a pancake mix.

The flour in Europe indeed contains lower gluten level comparing with north American flour. But this feature is essential to get the good open-crumb European style bread!
In fact, I find they are also much easier to handle while kneading and contribute better flavor than their NA counterpart (this is rather evident in any lean dough bread). So unless you want to make American toast bread, it's really not necessary to use any imported American flour.ciccihttps://www.blogger.com/profile/16282601030438408271noreply@blogger.comtag:blogger.com,1999:blog-25454672.post-6169505284869489812011-12-14T06:58:27.185+01:002011-12-14T06:58:27.185+01:00What is your falafel recipe? A few days ago I had the French version at a fancy reception in mid-town Manhattan. WHAT a difference. The French have it all over the Swiss in this area. Sadly, the French version (about 2 bites) is $2.50 a pop. On the other hand, when in Zurich last month I discovered I could not stand to pay 8 Swiss Francs for a simple cup of Starbucks. So I hate to think what the Luxemburgerli cost now. I'll let you know if I find some in CH. I've heard that you can ask at local bakeries and they will sell you flour and possibly VTG, but I'm so shy. Maybe I'll try that. I have a vague memory of seeing Andouille sausage once, but it was probably the French version, which I've read is milder and not exactly like the Cajun version. I've read that kielbasa is a good substitute, but I don't know where to get that either. Sorry I can't be of more help. Or maybe both. Since we now have a Laduree in Zurich, we can do a real price comparison. I don't remember exactly but I think Laduree macarons cost about 2.50sfr/each when I went a couple weeks ago, but they are also a bit bigger. Now I'm curious to investigate the per gram price between all the contenders. I think Laduree macarons are quite different from luxemburglis, both good in their own ways. But in any case, these days I'd prefer to eat peanut butter macarons from Vollenweider.Tanya Dhttps://www.blogger.com/profile/13913356411257627601noreply@blogger.comtag:blogger.com,1999:blog-25454672.post-91139281657025381522011-07-25T23:02:28.082+02:002011-07-25T23:02:28.082+02:00Hi Elisa - I'm jealous that you are in Sardini...Hi Elisa - I'm jealous that you are in Sardinia :) Hope you enjoy the Viadukt when you get back.Tanya Dhttps://www.blogger.com/profile/13913356411257627601noreply@blogger.comtag:blogger.com,1999:blog-25454672.post-33142899477485764472011-07-25T14:13:48.864+02:002011-07-25T14:13:48.864+02:00I'm a little embarrassed to say that haven...I'm a little embarrassed to say that haven't been to the new Viadukt yet, despite having driven by amany many times - oops :-)
Right now I a busy swimming and munching on pane carasau and slurping gelato while visiting my family in Sardinia ;-) I definitely want to go there before summer is over, especially after this excellent post about it!Elisa @ Crazy, Amazing Lifehttps://www.blogger.com/profile/02886112221446685560noreply@blogger.comtag:blogger.com,1999:blog-25454672.post-83986816126622620082011-07-18T00:36:59.193+02:002011-07-18T00:36:59.193+02:00I paid about 1.8 CHF per Luxembergurli as of July ...I paid about 1.8 CHF per Luxembergurli as of July 2011 in Zurich.
